Creamy Carbonara

Serves 4

450g spaghetti

7 tbsp butter

50ml full fat milk

4 eggs

250g mushrooms chopped

1 onion chopped

2 cloves garlic

300g chopped ham

 

 

 

 

Heat the butter in a frying pan over a medium-high heat until melted then add the onion and let it cook for 2-3 minutes. Add the garlic and mushrooms and stir well.

Meanwhile, cook the spaghetti in a large saucepan of boiling water for 9-12 minutes.

In a bowl, whisk the eggs with the milk

Drain the spaghetti and add to the frying pan. Add the egg mixture to the spaghetti in the pan immediately and toss everything together, lifting well and stirring to coat evenly. Make sure the spaghetti is piping hot to ensure the egg is cooked through.

Top with the chopped ham.

Serve with broccoli and butternut squash.
